There's nothing worse than looking in the bottom of your fridge and finding wilty veg, in this case some broccoli with the Monday blues. I was going to have this for Sunday lunch but we choose something else instead. Poor thing. Instead I thought I'd throw in some other bits to have some healthy soup instead.
I used:
2 1/2 onions(the half was a leftover from gravy)
1 large floret of broccoli(plus a tiny bit of frozen too)
2 pints veg stock
half a small pot of single cream(any creamy milk will do)
knob of butter
generous pinch of Allspice
Chop up onions and broccoli (keeping stalky bits of it too) fry onions and broccoli talk in butter and Allspice until soft then add stock, simmer for 10 minutes. Then add rest of broccoli and cream, stir well simmer a further 5 minutes the using a blender whizz away.
Garnish with feta(or less healthy cheesy croutons) and drizzle with balsamic vinegar.
Lunch is served.
