2 large eggs
4tbsp sunflower oil
4tbsp clear honey
1 tbsp vanilla extract
2 apples, cored and grated
125g wholemeal plain flour
125g plain flour
75g Kellogg's Special K granola
1 1/2 tsp baking powder
1 tsp bicarbonate of soda
1 tsp ground cinnamon
extra granola for sprinkling
Pre heat the oven to 180c/160c fan/gas mark 4 and line a tray with 12 muffin cases.
In a jug mix the milk, eggs, oil, honey & vanilla together.
Put the grated apple in a large bowl, add the flours, granola, baking powder, bicarb. & cinnamon, then mix in the jug contents briefly so mixture comes together.
Divide mixture between the cases & sprinkle a little more granola over the top of each muffin.
Bake for 25-30 minutes or until golden and well risen. Remove from tray and place on wire rack, these can be eaten warm or cold.

this sounds perfect, we're obsessed with granola and get through it like noone's business but i'm on a strict pre-holiday diet so i definitely need to give this a try! will have to try the muffins too thanks for sharing the recipe :) x
