Special K Granola*

Hi all I've recently been sent some Special K Granola to test out, which is great for me as granola is a firm favourite in our household, my children love it to eat it as a snack in front of the TV so were very excited when a huge box of it arrived. 
I also received a canvas shopper and tea towel with a recipe for Granola Muffins on it, and it would be remiss of me not to try it out. The recipe is below and they were wonderful warm for an alternative breakfast or after school snack with a glass of milk. 
The Granola comes in 2 flavours Raisins & Red Apples (which we used in the muffins) or Cranberry, Pumkin Seeds and Almonds(which was lovely as a topper for yoghurt) and unlike some on the market was packed with whole pieces and not dusty. 
It states it has 30% less fat (it is Special K after all) than other granolas but that doesn't take anything away from the taste. It should available in the shops now for around £2.99 per bag. 
Ingredients: 100ml milk
2 large eggs
4tbsp sunflower oil
4tbsp clear honey
1 tbsp vanilla extract
2 apples, cored and grated
125g wholemeal plain flour
125g plain flour 
75g Kellogg's Special K granola
1 1/2 tsp baking powder
1 tsp bicarbonate of soda
1 tsp ground cinnamon
extra granola for sprinkling 

Pre heat the oven to 180c/160c fan/gas mark 4 and line a tray with 12 muffin cases.
In a jug mix the milk, eggs, oil, honey & vanilla together.
Put the grated apple in a large bowl, add the flours, granola, baking powder, bicarb. & cinnamon, then mix in the jug contents briefly so mixture comes together.
Divide mixture between the cases & sprinkle a little more granola over the top of each muffin.

Bake for 25-30 minutes or until golden and well risen. Remove from tray and place on wire rack, these can be eaten warm or cold. 

Now for the great bit, Special K has given me a box (6 packets) of each flavour to give to one lucky person, my estimate is this is about 3 months worth of granola for one person.

  6. this sounds perfect, we're obsessed with granola and get through it like noone's business but i'm on a strict pre-holiday diet so i definitely need to give this a try! will have to try the muffins too thanks for sharing the recipe :) x
