Aubergine Stacks

Yum yum Aubergine Stacks which I think is a variation of a Jamie Oliver dish but this is my version.

For 4 people as a starter or 2 people as a main.

Ingredients:
1 Large Aubergine(Eggplant)
4 Tomatoes 
Feta Cheese
Red Pepper
Basil Leaves

Slice the Aubergine into 16 slices lay flat onto tea towel & lightly salt each slice leave for ten minutes then turn over and repeat process, this will remove any bitterness from Aubergine(some people do this, some don't).
Thinly slice tomatoes & peppers, then pile up thus on a baking tray.
Aubergine, tomatoes, crumbled feta & torn basil leaf, then aubergine, peppers, feta, torn basil leaf, repeat until you have 4 nice stacks looking a bit like this

Then bake the stacks at gas mark 5 for 30 minutes, they can be served with garlic bread, a salad, rice or with fish as a side dish, these are deceptively filling. And in the tradition of the cooking shows here is the end result.
